I started this blog so my daughters could find all of our family favourite recipes in one place. It has actually grown into more than just the family favourites but also other recipes we've tried out in our kitchen. I don't like to fill up the post with alot of chatter. Sometimes there's a little story to tell, but usually I like to get right to the point. So this is for them, but hope you find some recipes that you like as well. I'll be sharing a lot of recipes, and along the way you'll find some crafty things and maybe some helpful hints too! Welcome!

Scalloped Mac'n Cheese

This is a recipe from a cookbook my Mom had which had been passed down to her from her aunt.  The book, called "The Bride's Book" was published in 1932.
This is the original recipe here. My tweeks on it will follow.
I used:

2 cups macaroni
2 tbsps margarine
1 tbsp flour
2  1/2 cups milk
1 tsp paprika
salt and pepper to taste
1 onion, chopped
1/2 lb (2 cups) old cheddar, grated
1 - 28 oz can whole tomatoes, mashed

In a saucepan heat the margarine and add the flour and paprika.  Whisk in the milk and cook 4-5 minutes to thicken. Add the grated cheese, then salt and pepper. Set aside.
Note:  If you like a really saucy dish, double this part.

Chop the onion and fry in a pan until lightly golden.  Mash the canned tomatoes with a potato masher, then add the fried onion.

Meanwhile cook macaroni as directed on package and drain.

Coat a 13 X 9 casserole dish with cooking spray. 
Mix a ladleful of tomatoes with the cooked macaroni.
Now layer macaroni, then tomatoes and onion in the pan. Cover with the cheese sauce.

Top with buttered bread crumbs.  Take 2 tbsp. melted margarine and mix with 3/4 cup italian bread crumbs. (Action shot)

Bake at 350 F for 30 minutes. Here it is with Coconut Breaded Chicken Strips.
