When you can't decide if you want a fruit or veggie salad, this is the one for you.
Take:
2 cups seedless watermelon, cubed
1 English cucumber, cubed
a couple of handfuls of iceberg lettuce
1 tbsp fresh mint, finely chopped
1 tbsp fresh basil, finely chopped
Whisk together:
the juice (approx 2 tbsps) and zest of 1 lemon
2 tbsps olive oil
1/2 tsp sugar
1/2 tsp honey
salt and pepper to taste
Toss all together and serve immediately. If you want to make it ahead of time, set aside the lettuce and dressing until ready to serve.
