I started this blog so my daughters could find all of our family favourite recipes in one place. It has actually grown into more than just the family favourites but also other recipes we've tried out in our kitchen. I don't like to fill up the post with alot of chatter. Sometimes there's a little story to tell, but usually I like to get right to the point. So this is for them, but hope you find some recipes that you like as well. I'll be sharing a lot of recipes, and along the way you'll find some crafty things and maybe some helpful hints too! Welcome!

Swiss Chicken and Potatoes

Trying to add calories to a meal is not what I'm used to, but when cooking for someone who is fighting cancer you need to add calories wherever you can. I even added a couple of tablespoons of whey powder to the 14% sour cream.  If you don't want or need the extra calories, no problem, use low fat cheese and sour cream. 

2-3 cups cooked chicken
6 slices Swiss  cheese (or mozzarella)
1 - 1  1/2 lbs sliced potato rounds (4-5 medium)
1 - 10 oz (284 ml) can cream of mushroom soup
1 - 10 oz (284 ml) can cream of asparagus soup
2 tsp chopped fresh parsley
1 cup 14% fat sour cream
2 cups homemade garlic croutons or Stove top stuffing
Sprinkle of bacon bits if you have them

Put the potato slices in a pot of salted water. Cover and bring to a boil, then turn off the heat. Leave covered for 10 minutes. 
In the meantime stir the chicken, soups and parsley together. 
Drain the potatoes and fold them in too.  
Spray a 13 X 9" baking dish and pour in the chicken mixture.
Toss the croutons or Stove Top stuffing  mix with the sour cream. Spoon on top of the chicken and potatoes.
Lay the slices of cheese over top and sprinkle with bacon bits.
Bake uncovered in a 375 F oven for 25-30 minutes.
Rest 5 minutes before cutting. And surprisingly the potatoes held their shape so a nice piece was easy to cut.  It didn't make a sloppy mess!
