Kind of reminds me of chicken fried rice. But with a Mediterranean twist.
1 1/2 cups rice
3/4 cup tomato sauce
1 1/2 cups chopped cooked chicken
1 onion, chopped
1/2 red pepper, chopped
3 green onions, sliced
2 garlic cloves, minced
1/2 cup chopped mixed greens
1/2 cup chopped walnuts
salt and pepper to taste
Cook the rice then stir in the tomato sauce. Saute the onion, green onion, red pepper and garlic in some butter or olive oil. Finally toss in the remaining ingredients.

Heat everything in a casserole dish until warm, 325 F for 30 minutes.
