Believe it or not this is my first attempt ever at making brussels sprouts!
3/4 - 1 lb brussels sprouts
2 tbsps olive oil
1 tbsp balsamic vinegar
salt and pepper to taste
3 slices bacon, cut in 1 inch pieces
1/2 cup dried cranberries
1/4 cup chopped walnuts
Cut ends off the brussels sprouts and cut the extra large ones in half. Mix in the olive oil and balsamic vinegar. I prepared to this point earlier in the day and just kept them in a plastic bag.
When ready to cook spread your sprouts out on a parchment lined baking sheet. Distribute the bacon pieces and sprinkle all with salt and pepper.
Roast at 400F for 20-30 minutes. Stir them around halfway through.
Remove from the oven and toss in the cranberries and walnuts. I should have used walnut halves, they would've looked better, but chopped is what I had on hand. But aren't the colours great?
