A light dressing you could use on any leafy salad, but it's especially nice in this Sunflower Rice Salad

1/4 cup lemon juice
1/3 cup olive oil
2 tbsps honey
1/4 tsp salt
1/4 tsp pepper
1/2 tsp chia seeds
Put everything together in a small jar and shake.
