I started this blog so my daughters could find all of our family favourite recipes in one place. It has actually grown into more than just the family favourites but also other recipes we've tried out in our kitchen. I don't like to fill up the post with alot of chatter. Sometimes there's a little story to tell, but usually I like to get right to the point. So this is for them, but hope you find some recipes that you like as well. I'll be sharing a lot of recipes, and along the way you'll find some crafty things and maybe some helpful hints too! Welcome!

Saucy Baked Seafood Alfredo

1  1/2 tbsps flour
pinch baking soda
pinch salt
1  1/2 tbsps butter
1  1/2 cups milk (2 % is fine)
1/4 cup parmesan cheese
1/2 cup cottage cheese
1 cup shredded cheese (cheddar, mozzarella, havarti, etc)
1  1/2 cups pasta , I used shells. Seemed right with seafood : )
olive oil
2 cloves garlic, minced
1/2 lb shrimp (cooked)
1/2 lb mussels meat (raw)
zest of 1 lemon
2-3 tbsps chopped fresh parsley

Prepare the white sauce. Mix together the flour, baking soda and salt.  In a saucepan melt the butter, then stir in the flour, etc. Pour the milk in while whisking and heat a few minutes to thicken.  Add the parmesan and remove from heat.
Cook pasta according to package directions, drain, toss with olive oil and set aside. 

Have the cottage cheese, 1/2 cup shredded cheese and parsley mixed together in a bowl.
Take your mussel meat and quickly fry them in a little oil and butter, along with the garlic, 2-3 minutes should do it.  If you have raw shrimp, cook them together with the mussel meat until they are pink. If you have the cooked shrimp like I did just toss them in with the cooked mussels/garlic once off the heat.

Spray a 10 X 10 baking dish with cooking spray.
Mix 1/2 the white sauce with the pasta and pour into the prepared dish. Layer the seafood next, sprinkled with 1/2 the lemon zest.
Followed by the cottage cheese mix. Cover that with the other 1/2 of the white sauce, zest and the remainder of the shredded cheese.

Cover with foil and bake at 350 F for 25 minutes.
Uncover for another 10 minutes and broil 1-2 minutes at the end.
Let stand 5-10 minutes before digging in.
