Love these one-pot pasta dishes!
Lots of flavour in this one.
1 medium sweet potato
1/4 cup 10 % cream (or more)
450 g linguini
2 cloves garlic, minced
4 cups vegetable broth
1 cup white wine
2 tbsps olive oil
1 small onion, finely chopped
1/4 tsp nutmeg
1/4 tsp ginger
1/8 tsp red pepper flakes
1 tsp salt
1/4 tsp pepper
2 oz goat cheese
12-15 basil leaves
extra 1/4 - 1/2 cup 10% cream
Microwave the sweet potato until tender, scoop out the flesh and purée it along with 1/4 cup of cream.
You'll have about 1 cup purée.
It was this thick when I used it. Next time I would probably use more cream here to make it less thick.
In a large pot add the purée to the next 11 ingredients up to and including the pepper. Yes the linguini goes in here.
I broke mine in half to fit in the pot.
Bring everything to a boil. Stir well making sure the linguini doesn't stick to itself. Once it all comes to a boil reduce heat to medium and keep on stirring, making sure nothing sticks to the bottom of the pan. Continue cooking and stirring for 9 minutes. Check to see that your pasta is cooked then remove from heat.
Cut the goat cheese into chunks
and stir into the hot pasta. Let sit for a couple of minutes then stir to incorporate the cheese.
You might want to add an extra 1/4 to 1/2 cup more cream depending on your preferences for creaminess.
Serve topped with basil leaves and parmesan cheese.
