Need to eat more greens?
You've got basil, spinach and avocado right here!
3 cloves garlic
2 tbsps fresh chopped basil
1/2 cup chopped spinach
2 tbsps lemon juice
2 tbsps olive oil
1 ripe avocado
1 tsp salt
1/2 tsp fresh ground pepper
1 tbsp parmesan cheese
a handful of cherry tomatoes, sliced
1 tbsp olive oil
1 tbsp butter
In a food processor, combine 2 chopped garlic cloves, basil and spinach. Add lemon juice, olive oil and avocado, along with salt, pepper and parmesan.
Heat the olive oil and butter in a frying pan and add 1 minced garlic clove and the tomatoes. Brown lightly.
Once your pasta is cooked, drain and toss with the sauce.
If you make the sauce earlier in the day, just microwave it a minute or two.
Top the pasta with tomatoes and garlic. I added some cooked chicken too.
Add more olive oil to taste.
