This salsa is a great side to any fish dish, but it would be equally good served as a snack with tortilla chips.
1/2 avocado, cubed
1 cup watermelon, cubed
1/4 cup onion, diced
1/2 cup yellow pepper, diced
2 tbsps lemon juice
1/2 tsp finely chopped jalapeno pepper
salt and parsley to taste
Mix everything together and put it in the fridge for a couple of hours before serving.
