A simple dish that serves 2 as a main and 6-8 as a side.
4 cups cabbage, chopped into 1 inch pieces
1 cup chopped onion
1 or 2 cloves of garlic, minced
6 slices of bacon, cut into 2 inch pieces
1 tsp celery seed
1 tsp salt
few grinds of black pepper
1 tbsp. white wine vinegar
sprinkle pepper flakes (optional)
Brown bacon in a deep sided frying pan. Add onion and garlic, browning lightly. Deglaze the pan with white wine vinegar.
Add the cabbage and cook on low heat 25-30 minutes. Longer if you want the cabbage more tender, I like it tender crisp. Toss in the seasonings and serve.
