If your freezer door gets accidently left opened like mine was and a bunch of stuff starts thawing, grab that bag of frozen strawberries and get baking these! (After you clean up that mess in the freezer of course)
8 oz cream cheese
1/4 cup reserved batter
1/4 cup sugar
1 tbsp reserved juice from frozen strawberries
3 cups flour (+1 tbsp)
1 tsp baking powder
1/2 tsp baking soda
1 tsp cinnamon
1/2 tsp salt
2 cups sugar
1 1/4 cups vegetable oil
4 eggs
1 tsp vanilla
1/4 cup milk
3 cups roughly chopped, partially thawed frozen strawberries
Butter and dust (or spray Baker's Joy) 2 - 9 X 5 loaf pans.
Whisk together 3 cups flour, baking powder, baking soda, cinnamon and salt. Set aside.
In a large mixer bowl beat sugar, oil, vanilla, eggs and milk together, then add the dry ingredients to the wet.
Mix 1 tbsp flour with strawberries and fold into the batter. Take 1/4 cup of the batter and mix it with cream cheese, sugar and juice from strawberries.
Pour have the batter into prepared pans, dollop the cream cheese mix and swirl it through with a knife,
then pour in the remaining batter. So pink!
Bake at 350 F for 1 hour and 20 minutes. A cake tester should come out clean.
Cool 30 minutes in pan before removing to cool on a rack.
The freezer got defrosted and cleaned up and 2 delicious loaves got baked. Not bad
