The reason I made these.....I found some leftover sweet mincemeat from Christmastime in the back of the fridge!
1 cup all purpose flour
1 cup cake flour
1/3 cup sugar
1 tbsp baking powder
1 tsp cinnamon
1/4 tsp salt
3/4 cup milk
1/3 cup vegetable oil
1 egg
1 cup sweet mincemeat
1 small apple, unpeeled and chopped
Mix flours, sugar, baking powder, cinnamon and salt together. Stir milk, vegetable oil, egg and mincemeat together and add to dry ingredients. Add the chopped apple. You can use store bought mincemeat or here's a very good recipe that uses green tomatoes, really!

Once the batter is mixed together, don't over mix, fill muffin papers...
and bake in a 400 F oven for 25 minutes.
