Need a mid-morning snack?
1 1/2 cups oats
1 cup flour
1/2 cup all-bran
1/2 cup brown sugar
1 tsp baking powder
3/4 tsp baking soda
1 tsp cinnamon
1/2 tsp salt
1 cup applesauce
1/2 cup milk
2 tbsps vegetable oil
1/2 tsp vanilla
1 egg
Mix the first eight ingredients together in a large bowl.
In a smaller bowl mix the remaining wet ingredients together.
Add the wet ingredients to the dry and stir just until mixed. Don't over mix or you could end up with "tough" muffins!
Pour into paper lined muffin tins.
Bake at 400 F for 18-20 minutes.
