A light nibble...
English cucumber
4 oz feta
3 oz cream cheese
1 tbsp lemon juice
1/4 tsp pepper
2 1/2 tbsps olive oil
sundried tomatoes in oil, chopped
fresh basil leaves, chopped
Pulse the feta and cream cheese together in a food processor, then add lemon juice and pepper. Make sure the feta is completely processed.
Pour the olive oil in while the processor is running. Chill until ready to use.
Slice cucumber and top with a dollop of cheese. Garnish with sundried tomatoes and basil and serve.
