Sometimes you just open the fridge and make salsa out of whatever you find inside.
1/2 cup diced tomato
1/3 cup diced red pepper
1/2 cup diced orange segments
1 diced avocado
2 tbsps honey
1 tbsp lime juice
1 tsp minced ginger
a few grinds of pepper
Chop everything up, mix the dressing, toss and serve immediately.
Have it with chicken, fish or pork.

That looks absolutely delicious and the perfect dish for me to make today for my husband after a long week at work. He will be impressed and pleased. He is always asking for fresh vegetables and fruit. Thanks so much for the recipe.

DeleteYes, it is very good! In fact I just made it today (the avocados were not ripe when I bought them so I put them in the fridge for a week to slowly ripen). I had all the ingredients except the fresh ginger so next time I will be sure to have that on hand, that will add some perkiness to it. Husband is very pleased, he loves avocado.
