Salsa with Orange

Sometimes you just open the fridge and make salsa out of whatever you find inside.

1/2 cup  diced tomato
1/3 cup  diced red pepper
1/2 cup diced orange segments
1 diced avocado

2 tbsps honey
1 tbsp lime juice
1 tsp minced ginger
a few grinds of pepper

Chop everything up, mix the dressing, toss and serve immediately.
Have it with chicken, fish or pork.

    2. Yes, it is very good! In fact I just made it today (the avocados were not ripe when I bought them so I put them in the fridge for a week to slowly ripen). I had all the ingredients except the fresh ginger so next time I will be sure to have that on hand, that will add some perkiness to it. Husband is very pleased, he loves avocado.
