Baked Tomatoes

If your garden is like mine you will soon be overrun with ripe tomatoes! I like a toasted tomato sandwich as much as the next person, but after awhile well you need to switch it up, eh?

Here's a quick little recipe you might enjoy.

Cut your nice juicy tomatoes in half and brush with olive oil.
Sprinkle with salt and pepper, then top with your favourite cheese. 

A little more salt and pepper, parmesan and sliced green onion.

Into the oven at 400 F for 15-20 minutes and you've got yourself a nice light lunch or dinner side.
