I have always wanted to try an olive oil cake. This one is very tender and moist and if I had to describe the taste I'd say a little rustic in flavour.
1/2 cup flour
2 tbsps corn meal
1/2 tsp salt
1 1/2 tsps baking powder
1 lemon's zest
1/2 cup sugar
4 eggs
1 lemon's juice
1/2 cup melted butter
1/2 cup olive oil
5 Italian plums, sliced in 4
Grease a 9" spring form pan and line the bottom and sides with parchment paper.
Sift together the flour, corn meal, salt, baking powder and set aside.
Zest lemon into mixer bowl and press with fingers against the side of the bowl to release the flavour. Add sugar and eggs and beat using whisk attachment until mixture is frothy.

In a separate bowl mix lemon juice, olive oil and melted butter together.
Slowly pour this mixture into the sugar mixture. Fold in flour mixture just until blended.
Pour 2/3 of the batter into the spring form pan.
Slice the plums in four
and roughly chop the inside slices of the plums and scatter over batter.
Pour balance of batter in and arrange the whole slices on top.
Bake at 350 F for 35 - 40 minutes.
