If you want colourful this is the dish for you!
12 oz bag of baby carrots
2 handfuls yellow beans
1/2 red onion, sliced thick
1 handful snow peas
3 small baked beets, sliced
1/2 cup olive oil
1 tsp salt
1 tsp ground black pepper
1 large garlic clove, minced
Once you brush them clean, wrap the beets individually in foil as you would a baked potato. Place in a 350 F oven for 30-60 minutes depending on the size of your beets. Once they are fork tender cool. You can cut the stem end off and the rest of the peel should easily slide off as well. You can do this step a few days earlier.
Mix the oil, salt, pepper and garlic together and toss with carrots, yellow beans and onion. Spread out on a lined baking sheet and place in a 375 F oven for 25-30 minutes. Remove from the oven and add the snow peas and beet slices. Return to the oven for another 10-15 minutes.
