I started this blog so my daughters could find all of our family favourite recipes in one place. It has actually grown into more than just the family favourites but also other recipes we've tried out in our kitchen. I don't like to fill up the post with alot of chatter. Sometimes there's a little story to tell, but usually I like to get right to the point. So this is for them, but hope you find some recipes that you like as well. I'll be sharing a lot of recipes, and along the way you'll find some crafty things and maybe some helpful hints too! Welcome!

Turkey, Kale and Sweet Potato Casserole

So, turkey.  You have leftovers from Thanksgiving and before you know it you'll have leftovers from Christmas. Here's a healthy meal you can whip up in no time.

Below is a variation on this Campbells's soup recipe

1-2 tbsps olive oil
1 lb leftover turkey
1 medium onion, sliced
2 cups grated sweet potato
1 grated carrot
3 cloves garlic, minced
4 cups baby kale
salt and pepper to taste
1  1/2 cups shredded cheddar cheese
1/4 cup parmesan
1 can cream of celery soup

Heat olive oil in large skillet.  Add onion, sweet potato, carrot and garlic and cook 3-5 minutes until tender.

Stir in the kale and cooked, leftover turkey, then sprinkle with salt and pepper.

Mix the cheddar and parmesan together and divide in half.

Mix soup and half the cheese together and add to the skillet.

Prepare a deep 8" baking dish with cooking spray and spoon in the turkey/veg mix. Top with the rest of the cheese.

Bake at 400 F for 30 minutes.
