Simple yet satisfying
1 lb fettuccini
175 g smoked, fully cooked sausage, sliced
1 tbsp butter
3 cloves garlic, minced
1 medium onion sliced
1 green pepper, sliced
1/4 tsp red pepper flakes
1/2 tsp lemon pepper
1 cup chicken or turkey broth
1 tsp capers with their juice
1/3 cup parmesan
Cook fettuccini as per package directions, and while it cooks heat butter in a large skillet and add sliced smokie. Stir in minced garlic, onion and peppers and cook 4-5 minutes, until lightly browned.
Pour about half the broth into the skillet to de-glaze the pan. Add the rest of the broth, pepper flakes, lemon pepper and capers and cook on medium heat 8-10 minutes.
Before draining the fettuccini reserve about 1/2 cup of the pasta water. Set aside and drain the pasta.
Mix the sausage mixture with the fettuccini, adding a small amount of pasta water to make it saucy. Stir in the parmesan cheese.
