"Fuh" not "foe" but the taste is Whoa! (Never said I was a poet)
4 cups Campbell's Pho broth
1/4 cup celery slices
1/2 cup onion slices
1/2 cup finely shredded carrot
1 1/2 cups sliced/shredded rotisserie chicken
5 oz/340 g rice or asian-style egg noodles (3-4 nests)
Garnish: celery leaves and sriracha sauce
I just happened upon this pho broth in the grocery store the other day. Might make pho from scratch one day but this one was pretty tasty!
Pour the broth into a large pot and warm on medium heat. Add celery, onion and carrots and simmer 10-15 minutes.
Cook noodles in salted water as directed on package and set aside.
Add chicken to broth and heat through, about 5-10 minutes.
Place noodles in serving bowls and ladle the chicken and broth over top. Add the celery leaves and sriracha and "whoa"!
Mom's are always running, am I right? And when you hit menopause, you're running hot and cold! So welcome to Hot and Cold Running Mom...where you'll find mostly easy recipes (because who has time for complicated ones!), helpful household hints and a few crafts. Note: NOT just for Menopausal Moms!
I started this blog so my daughters could find all of our family favourite recipes in one place. It has actually grown into more than just the family favourites but also other recipes we've tried out in our kitchen. I don't like to fill up the post with alot of chatter. Sometimes there's a little story to tell, but usually I like to get right to the point. So this is for them, but hope you find some recipes that you like as well. I'll be sharing a lot of recipes, and along the way you'll find some crafty things and maybe some helpful hints too! Welcome!
