I started this blog so my daughters could find all of our family favourite recipes in one place. It has actually grown into more than just the family favourites but also other recipes we've tried out in our kitchen. I don't like to fill up the post with alot of chatter. Sometimes there's a little story to tell, but usually I like to get right to the point. So this is for them, but hope you find some recipes that you like as well. I'll be sharing a lot of recipes, and along the way you'll find some crafty things and maybe some helpful hints too! Welcome!

One Pan Lemon Chicken Dinner

I can't tell you how good this was, you'll just have to try it for yourself!



4 boneless breasts
3 tbsps lemon juice
2 tsps minced garlic
1 egg
2 tsps dried parsley
1/2 tsp each salt and pepper

1/2 cup bread crumbs
1 tbsp cornstarch
1/3 cup parmesan

3 - 4 medium potatoes
1/2 cup melted butter
2 tsps minced garlic
salt to taste
1 tsp lemon juice

2 cups frozen mixed vegetables
parsley

Mix lemon juice, garlic, egg, parsley, salt and pepper together and pour into a deep dish. Place the chicken breasts in the egg mixture, turn to coat, and refrigerate 30 minutes.

Mix melted butter, minced garlic, salt and lemon juice together. Cut potatoes into 1" chunks and place in a bag. Pour half the melted butter mix in with the potatoes and shake to coat, then put them on one side of a parchment lined baking sheet.  Reserve the other half of the butter mix.

Combine bread crumbs, cornstarch and parmesan in a shallow bowl. Press chicken into crumb/cheese mix coating both sides. Place alongside potatoes.

Bake at 400 F for 25 minutes and flip chicken. Place vegetables on opposite side of the pan. Pour the reserved half melted butter mix over all and broil 10 minutes.

Sprinkle with parsley.

Serves 4....and if your sheet of parchment is larger than your pan you've got an easy clean-up!
