Looking around the other day for something to make with ground beef, I stumbled upon this dish that's easy to prepare and is packed with flavour!
1 1/2 lbs lean ground beef
3/4 cup chopped onion
3/4 cup chopped red pepper
3-4 garlic cloves, minced
1 tbsp olive oil
1/2 - 1 tsp minced jalapeno
1/2 tsp salt
1/4 tsp pepper
2 bay leaves
1 1/2 tsp ground cumin
Pinch cayenne
1/4 cup tomato paste
1/2 cup chopped greens
14 oz diced canned tomatoes
2 tbsps capers
2 tsps caper brine
1 tbsp red wine vinegar
In a large saucepan cook ground beef, onion and red pepper in olive oil until the meat is no longer pink and the veggies have softened. Add garlic, jalapĕno and bay leaves.
Mix the remaining ingredients together and add to the pan.
Bring to a boil, then reduce heat and simmer uncovered for 20-30 minutes.
Serve with rice and salsa.

Mom's are always running, am I right? And when you hit menopause, you're running hot and cold! So welcome to Hot and Cold Running Mom...where you'll find mostly easy recipes (because who has time for complicated ones!), helpful household hints and a few crafts. Note: NOT just for Menopausal Moms!
I started this blog so my daughters could find all of our family favourite recipes in one place. It has actually grown into more than just the family favourites but also other recipes we've tried out in our kitchen. I don't like to fill up the post with alot of chatter. Sometimes there's a little story to tell, but usually I like to get right to the point. So this is for them, but hope you find some recipes that you like as well. I'll be sharing a lot of recipes, and along the way you'll find some crafty things and maybe some helpful hints too! Welcome!
