If you're looking for an easy hot summer night/don't feel like cooking kind of meal, then look no further. Only minimal cooking required here...
1 1/4 cups sliced or chopped grocery store rotisserie chicken
2 tbsps olive oil
1 garlic clove, minced
2 tbsps lime juice
1 tsp chili powder
2 fresh pineapple rings
1/3 cup salsa
1 green onion, sliced
Sour cream
Mixed salad greens
4 tortillas
Heat olive oil in a skillet and lightly brown the garlic. Add the chicken and toss with lime juice and chili powder. Keep warm on low heat.
Grill pineapple then toss with salsa. And that's all the cooking there is!
Lay a tortilla on the plate. Add salad greens, chicken and pineapple. Then top it all off with a dollop of sour cream and some sliced green onions.
Bring on those hot summer nights!
