Who knew that the humble mashed potato could taste so good?
Ingredients:
1 lb potatoes, peeled and quartered
Butter and milk to mash
1/2 cup hummus (either store bought or homemade)
parsley to garnish
Simply boil the potatoes, drain and mash with butter and milk as you would for your regular everyday mashed potatoes.
Then mash in the hummus. That's it!
Serves 4
