No apologies for making breakfast at suppertime!
Ingredients:
1 box cornbread flavour Stovetop stuffing
2 1/2 cups milk
1 lb breakfast sausages
8 eggs
2 garlic cloves, minced
1 cup shredded cheese
1 1/2 cups corn or peas
salt and pepper
1/4 cup fresh parsley
Fry sausages until lightly golden then cut into quarters and place in a greased 13 X 9" baking dish.
Mix everything else together and pour over sausages. I used frozen peas here, but would have preferred kernel corn. Unfortunately I couldn't find a can or frozen bag of corn in the house and settled for the peas. Really any veg will work I supposed, but I had my heart set on corn.
Bake at 350 F for 1 hour, then let stand 5 minutes before cutting.
Very satisfying and savory but next time I'll make sure I have corn in the house!
