I started this blog so my daughters could find all of our family favourite recipes in one place. It has actually grown into more than just the family favourites but also other recipes we've tried out in our kitchen. I don't like to fill up the post with alot of chatter. Sometimes there's a little story to tell, but usually I like to get right to the point. So this is for them, but hope you find some recipes that you like as well. I'll be sharing a lot of recipes, and along the way you'll find some crafty things and maybe some helpful hints too! Welcome!

No Bake Baklava Truffles

If you like baklava then honey you'll love these baklava truffles!

Ingredients:

Filling:
2 tbsps butter
2 cups chopped walnuts or pecans
1/2 cup honey
1 tsp cinnamon
1/2 tsp salt
2 cups shredded wheat cereal, hand crushed

Dipping:
1/3 cup honey

Coating:
1 tbsp butter
1 cup finely chopped walnuts or pecans
1  1/4 cups shredded wheat cereal, finely crushed
1/4 tsp salt
coconut (optional)

Note: This recipe calls for shredded wheat cereal, but I used brown sugar flavoured Mini Wheats. Similar but sweeter...worked well.



For the coating melt butter and add the nuts, finely crushed cereal and salt. Toast lightly about 3 minutes, then spread out to cool. To crush the cereal I placed it in a bag and used the rolling pin and for the finely crushed nuts I used my coffee grinder.



For the filling melt the butter and add the walnuts. Toast until fragrant, about 5 minutes. Place the nuts in a food processor along with the honey, cinnamon and salt. Process to make a nut butter.


Mix the nut butter with the hand crushed cereal using your hands to combine well.



Take heaping teaspoons and roll into 1" balls. Place on a parchment lined baking sheet.


For dipping, microwave the honey for 1 minute. Take a toothpick and pick up a ball, dip in honey then roll in coating.


Set back on the parchment to cool.



I added coconut to some of the coating which was nice too!



Store in an airtight container.



Makes 50 - 1" balls
