Swedish meatballs without getting hopelessly lost in an IKEA maze (I mean store) !
Ingredients:
1 small onion, finely chopped
2 tbsps butter
2 slices of bread, torn into bits
3 tbsps milk
1 lb ground beef (or trio - beef/veal/pork)
1 egg
1 tsp salt
1/4 tsp pepper
1/4 tsp nutmeg
1/2 tsp allspice
1/2 tsp garlic powder
1 and 3 tbsps butter
1 tbsp worcestershire sauce
2 tbsps flour
1 3/4 cups beef broth
1 tsp garlic powder
1/2 cup sour cream
2 tsp dry mustard
In a large skillet cook onion in 2 tbsps of butter until lightly golden. Remove from heat to cool.
Mix torn bread slices with milk. Once the onion is completely cooled add it to the bread, then stir together with the meat, egg, salt, pepper, nutmeg, allspice and garlic powder.
Shape into 12 balls and in the skillet heat 1 tbsp of butter and brown on medium heat for 10-12 minutes until the meatballs are completely cooked. Remove to a plate. (Why do my meatballs always look like pyramids or something instead of balls?!)
In the same skillet add 3 tbsps of butter on medium low heat. Mix the flour, garlic powder and dry mustard and sprinkle over the butter. Cook 1 minute then whisk in the broth, sour cream and worcestershire sauce.
Simmer until thickened about 5 minutes. Return the meatballs to the sauce and warm.
Serve over buttered noodles. And I like to add peas on top.
Serves 3-4
