1 lb ground beef
1 tbsp vegetable oil
1 medium onion, diced
2 cups kale, chopped
2 garlic cloves, minced
1 tbsp grated fresh ginger
1 tsp salt
1 tsp cumin
1/2 tsp chili powder
1 cup broth
1 1/4 cups canned diced tomatoes
Sweet Potato Mash:
1 medium sweet potato, diced
1 tsp vegetable oil
1/2 tsp cumin
1 tsp garlic powder
1/2 tsp salt
Parmesan cheese
Brown beef in a large skillet then remove to a plate.
To the same pan add vegetable oil, onion, kale, garlic and ginger. Cook 3-4 minutes on medium heat.
Return meat to the pan.
Add broth and canned tomatoes and bring to a boil, then simmer uncovered for 10 minutes.
In the meantime boil the diced sweet potatoes in enough water to cover 10-15 minutes until tender. Drain and mash with vegetable oil, cumin, garlic powder and salt.
Fill greased ramekins with meat mixture and top with the mashed sweet potatoes.
Finally sprinkle on some parmesan cheese and place the ramekins on a baking sheet.
Bake at 350 F for 30-40 minutes
