While panko is lower in fat and sodium than regular bread crumbs, I subbed in Special K cereal for part of the breading to keep this coating more on the healthy side without losing crispiness. And, of course, oven fried beats deep fried...you won't miss the extra fat or the oily mess!
Ingredients:
3 chicken legs, split
1/2 cup panko bread crumbs
1/4 cup crushed Special K cereal (or more Panko)
1/4 cup parmesan cheese
1 tsp garlic powder
salt and pepper to taste
2 tbsps flour
1 egg
1 tbsp water
cooking spray
Mix bread crumbs, crushed cereal, parmesan, garlic powder, salt and pepper together in a bag. Place the flour in another bag.
Beat the egg and water together in a bowl and now you're ready to start breading.
Shake each piece of chicken in the bag of flour to coat. Next dip in the egg mix to cover the flour. And finally toss each piece in the bread crumb mix to coat completely.
Place on a parchment lined baking sheet.
Give each piece of chicken a spray of cooking oil. I used canola oil because it's low in artery-clogging saturated fat.
Bake in a 350 F oven for 40-45 minutes
And just roll up that parchment paper for easy clean-up!
