Sweet and Sour Pineapple Pork Loin

They're calling for snow later this week so I really needed this tasty tropical dish to block the thought of that out of my mind!

Ingredients:
2  1/2 lb pork loin
1 fresh pineapple, bark and juices
1 tbsp tomato paste
2 tbsps vegetable oil
1/4 cup rice vinegar
1/4 cup honey
2 tbsps tamari (or soya sauce)
1/2 tsp ginger
2 onions, quartered

To cut the pineapple lop off the top and bottom, then stand it on end and slice off the bark. Cut down through the middle, then cut into spears. Slice off the woody middle.

Place the bark, juicy side up, in a baking dish and lay the pork loin on top.
Combine any juices from cutting the pineapple with the tomato paste, vegetable oil, rice vinegar, honey, tamari and ginger. Spoon about half over the pork and reserve the rest.



Place in a 400 F oven for 30 minutes. 
Next, reduce heat to 325 F, place the onion quarters and pineapple spears around the pork and baste with reserved sauce.

Return to the oven for 1  1/4 - 1  1/2 hours.
Let stand 10 minutes before slicing.


And try not to think of the snow that's on the way!
