I started this blog so my daughters could find all of our family favourite recipes in one place. It has actually grown into more than just the family favourites but also other recipes we've tried out in our kitchen. I don't like to fill up the post with alot of chatter. Sometimes there's a little story to tell, but usually I like to get right to the point. So this is for them, but hope you find some recipes that you like as well. I'll be sharing a lot of recipes, and along the way you'll find some crafty things and maybe some helpful hints too! Welcome!

Mixed Vegetables Au Gratin

This creamy side dish uses frozen mixed veggies and with the addition of cooked chicken or tuna could make a quick weeknight casserole. Or even a weekend meal when you're in the middle of holiday craziness!

Ingredients:
4 cups frozen mixed vegetables
1 onion, chopped
1 tsp minced garlic
1 cup shredded jalapeño cheddar cheese
3/4 cup mayo
3/4 cup panko
1/2 tsp smoked paprika
1/3 cup melted butter or marg
Cooked chicken or tuna, optional

Cook the veggies as per package directions and drain.
Then toss with the onion, garlic, cheese and mayo. (And chicken or tuna if using)

Scoop into a greased 1.8 L baking dish.
Combine the panko and paprika, then the melted butter and spoon over top of the veggies.

Bake at 350 F for 30-35 minutes.

Serves 4 as a side
