I started this blog so my daughters could find all of our family favourite recipes in one place. It has actually grown into more than just the family favourites but also other recipes we've tried out in our kitchen. I don't like to fill up the post with alot of chatter. Sometimes there's a little story to tell, but usually I like to get right to the point. So this is for them, but hope you find some recipes that you like as well. I'll be sharing a lot of recipes, and along the way you'll find some crafty things and maybe some helpful hints too! Welcome!

No Bake Peanut Graham Squares

Originally a classic Newfoundland recipe called Walnut Oh Henry Bars after the famous chocolate bar, but it had no chocolate and no peanuts like the chocolate bar?!?!?! So I fixed that : )

Ingredients:

graham crackers
1  1/2 cups brown sugar
3/4 cup butter
3/4 cup milk
1  1/2 tsps vanilla
1  1/2 cups roughly chopped toasted peanuts
1  1/2 cups shredded coconut
1/2 - 1 cup chocolate chips
2 cups graham cracker crumbs

Frosting:
2 cups icing sugar
1/3 cup butter
1  1/2 tsps vanilla
2 tbsps milk

Line a 13 X 9" baking pan with graham crackers. Set aside.

Toast peanuts in a single layer in a 350 F oven for 5-10 minutes then cool and chop. Combine the nuts with the coconut and graham cracker crumbs.
In a saucepan, over medium heat, mix brown sugar, butter, milk and vanilla. Heat to a slow roll boil and stir for 4 minutes. Remove from heat and pour into the nut mixture.


Spread this gooey yummy mixture over the graham cracker layer.

As I said earlier I thought this recipe needed a little chocolate so I added some chocolate chips here, just tapping them gently in on top of the nut mixture. Next time I might trying mixing them in with the nuts/coconut/graham crumbs.


Top with the second layer of graham crackers, pressing gently down.


Cool to room temperature on the counter, then refrigerate for 1-2 hours. Once chilled mix the frosting ingredients and spread on top of the graham crackers.


Once the icing is set, cut into squares.
