This naturally tender cut of beef doesn't need a lot of prep to turn our amazing!
Ingredients:
1 1/2 lb boneless strip loin
2 tbsps olive oil
2 tsps minced garlic
1/4 tsp salt
1/4 tsp pepper
1/2 tsp rosemary
1/4 tsp thyme
1-2 onions, sliced
First step, remove the roast from the fridge for 30 minutes before cooking. Then mix everything except the sliced onions together. Rub the seasoned oil all over the meat right before you want to start cooking it. Sit it on top of the sliced onions in a roasting pan, fat side up.
Roast at 425°F for 15 minutes.
Then turn down heat to 350°F for about 20 minutes per lb for a nice pink medium beef. Internal temperature should read 130°. (This one took 30 minutes)
When done remove from the oven and cover the pan with foil. Let rest 20-30 minutes before slicing.
It's worth the wait!
