Missing having extended family dinners because of social distancing associated with the coronavirus. For those who are quarantining together embrace the quality time that you probably don't usually have during normal day-to-day living.
Ingredients :
3 lb chicken
1 onion
2 garlic cloves
1/4 cup butter
dried thyme
herbed salt
cracked black pepper
1 1/2 cup chicken broth
1 1/2 tsps flour
fresh parsley
To prepare your chicken for the oven cut the onion in half or quarters and stuff into the cavity along with the garlic.
Rub the butter all over the bird then add the seasonings to taste.
Sit the chicken in your baking dish. Helpful hint: a few sprigs of fresh parsley underneath will keep your bird from sticking to the dish.
Pour about half the broth into the dish and bake at 425°F for 15 minutes.
Reduce heat to 325°F and baste 3 or 4 times for another 1 1/2 hrs. Add the rest of the broth when needed.
Remove the chicken to a plate. heat the dish and add the flour. Add a little more broth or water if necessary and whisk together for a little au jus.
This imposed isolation will pass and we'll be together again soon!
