Ingredients:
2 large tomatoes
1/4 cup light olive oil
2 tbsps red wine vinegar
1 tbsp chopped onion
1 tsp minced garlic
2 tsps fresh parsley, chopped
2 tsps fresh basil, chopped
1/2 tsp salt
pinch of black pepper
1/4 tsp lemon zest
parsley and basil to garnish
So here it is...slice the tomatoes 1/2" thick, lay out in a dish trying not to overlap them. Whisk the rest of the ingredients together and pour over the tomatoes. That's it!
Let them sit at room temperature for 2-3 hours. Or you could refrigerate them overnight then return to room temperature before serving.
Aren't they gorgeous served alongside my moussaka?
