So you've got a ton of cherry tomatoes...
Roasted up, these little gems can be served on grilled baguette with cheese and herbs or just as they are for a simple veggie side dish.
Ingredients:
2 cups cherry tomatoes
2 tbsps olive oil
1 tbsp balsamic vinegar
1/2 tsp salt
1/4 tsp pepper
fresh basil or lemon basil leaves
Toss the tomatoes with olive oil and balsamic and place on a lined baking sheet. Salt and pepper then roast in a 425°F oven for 20 minutes.Stir them around then return to the oven for 10 more minutes.

Add some fresh basil leaves and that's it!
