Chocolate Kale Brownies

Thanks to everyone who offered me ideas on what to use my kale in. I chopped some for the freezer, I packed some in a jar with olive oil and lemon juice, I will try a mashed potato recipe that came my way and I did make some kale chips (recipe link at the end of this post). But I couldn't resist these Chocolate Kale Brownies. The least healthy of all the recipes but at least brownies with kale must be better for you than those without 😉

Ingredients:

4 cups packed chopped kale

2 cups boiling water

1 cup butter

1 1/4 cups chocolate chips

1 1/2 cups sugar

1/2 cup brown sugar

2 tsps vanilla

4 eggs

1 1/4 cups flour

2 tbsps cocoa powder

1/2 tsp salt


Pour boiling water over the kale, push all the kale down into the water. I used the bottom of a measuring cup to get everything blanched. Then drain the kale and squeeze out any excess water.

Put the wilted kale in a food processor and process until well chopped.


Microwave the butter and chocolate chips together on high for 1 minute, stir and then return for 10 second intervals until the chips are almost all melted when you stir it together. 
Pour the chocolate mixture over the kale and add both sugars, vanilla and eggs.
Combine the flour, cocoa and salt and add to the bowl. Mix well then pour into a greased 13 X 9" baking pan.


Bake at 350°F for 35-40 minutes. Cool in the pan.


Dust with icing sugar or top with your favourite frosting. As you can see I couldn't make up my mind!


Moist and delicious brownies and no one will know what's in them!
