Spiced Ham and Apples

The spiced, saltiness of the ham is complimented very nicely by the sweet baked apples.

Ingredients:
1.4 kg (almost 4 lb) boneless ham

Glaze:
1 tbsp butter
2 tsps dijon mustard
1/4 cup fresh orange juice
zest of 1 orange
2 tbsps honey
1/4 tsp each allspice, nutmeg, ginger, garlic powder, onion powder
a few grinds of black pepper
pinch of chili powder
2 tsps lemon juice
1/4 cup brown sugar (and a little more for sprinkling)

2 large, firm apples

First, take the ham out of the fridge and put on the counter for 1-2 hours to bring to room temperature. Stud it with lots of whole cloves. Cut the apples each in sixths and place around the ham. Then cover, with a lid or foil, and bake in a 375°F oven for 30 minutes.


Combine the glaze ingredients in a small saucepan and heat to melt the butter. After the ham has been in the oven 30 minutes, remove from oven. Uncover and up the temperature to 400°F. Spoon some of the pan juices over the ham along with about 1/3 of the glaze. Return to the oven uncovered for 10 minutes.


Again, baste with juices and 1/3 of the glaze, sprinkle with some brown sugar. I only used about 1 tsp here but you could use more. Return to the oven for another 10 minutes.


Remove from oven , cover and let sit for 10-15 minutes before slicing.

Serve with baked apples, drizzled with the remaining glaze.
