I started this blog so my daughters could find all of our family favourite recipes in one place. It has actually grown into more than just the family favourites but also other recipes we've tried out in our kitchen. I don't like to fill up the post with alot of chatter. Sometimes there's a little story to tell, but usually I like to get right to the point. So this is for them, but hope you find some recipes that you like as well. I'll be sharing a lot of recipes, and along the way you'll find some crafty things and maybe some helpful hints too! Welcome!

Soft Pumpkin Cocoa Cookies

Is it pumpkin season already?!? 🎃

Why yes it is and it's also time to try these yummy, spiced chocolate cookies!


Ingredients:
1/2 cup coconut oil, melted
3/4 cup canned pumpkin purée
3/4 cup brown sugar
1 egg
2 tsps vanilla
2 tsps cinnamon
1/4 tsp allspice
1 tsp baking powder
1 tsp banking soda
1/4 tsp salt
2 tbsps cocoa powder
1 1/3 cups oat flour (use 1 1/2 cups oats in food processor)
1 cup dark or semi sweet chocolate chips

In a large bowl mix the coconut oil, pumpkin purée, brown sugar, egg and vanilla together. Mix the cinnamon, allspice, baking powder, baking soda, salt and cocoa powder together. Then add the dry to the wet ingredients and mix until well combined. Incorporate the chocolate chips.

Chill the dough for at least 1 hour or up to 24 hours to give the coconut oil time to set.
When ready to bake take heaping tablespoons of cookie dough, form into balls and place on a lined baking sheet 2" apart. Gently press down on the top slightly.


Bake at 350°F for 12-14 minutes. 


Makes 24 soft and delicious cookies
