Here's a clean-out-the-veggie-drawer recipe. You can swap in just about any vegetable that you have in your fridge for this one. I personally love the cabbage!
Ingredients:2 small carrots, cut 1/4 - 1/2" thick
a slice of cabbage 1/2 - 3/4" thick, keeping most of the core intact
1 onion, cut in wedges
1 sweet pepper, cut in wide
1 sweet potato, cut in chunks
2 tbsps vegetable oil
2 tsps worcestershire sauce
1 tsp soya sauce
garlic powder, salt and pepper to taste
or Mrs Dash Table Blend to taste
Combine the vegetable oil, worcestershire sauce and soya sauce and brush on both sides of the cabbage slice. Sprinkle generously with garlic powder, salt and pepper and place on a parchment lined baking sheet. Add the rest of the vegetables around the cabbage and sprinkle with more garlic, salt and pepper or Mrs. Dash.
Bake at 400°F for 40-45 minutes or until tender, flipping the cabbage slice halfway through the cooking time. To serve, cut the cabbage slice in wedges like you would a pie along with the rest of the veggies.
