1 cup diced cantalope
1 cup diced watermelon
1 mini cucumber, sliced (or 1/2 cup cubed cuc)
2 tbsps chopped mint leaves
a handful of cherry tomatoes, halved
Dressing:
1 tbsp lime juice
1 tbsp honey
1/2 tsp light soya sauce or tamari
black pepper to taste (optional)
Prepare the fruits and vegetables in a bowl. Mix the dressing ingredients together and pour into the bowl. Mix together.
