Beautiful, bright saffron is a savory seasoning and in this rice dish enhanced by the tang of lemon and a pop of green parsley!
If you follow me you may remember my Turmeric Rice from a few weeks back. Someone commented that it was a poor man's Saffron Rice. Well here's the real deal! While saffron may be pricey it is only used sparingly with turmeric still pumping up the colour.
2 cups chicken broth
3/4 cup long grain white rice or basmati
1 tsp onion powder
1/2 tsp garlic powder
1/4 tsp turmeric
juice of 1/2 large lemon
salt and pepper to taste
1/4 tsp saffron (no more or your rice might taste bitter)
2 tbsps fresh chopped parsley
Mix everything except the parsley together in a saucepan. Bring to a boil, then reduce heat cover and simmer 20 minutes. Let sit 5 minutes then fluff with a fork, add the parsley and serve.
